Our oil is cold pressed to retain purity
and filtered for clarity. It is packaged in dark glass
or in our unique catering pack to eliminate light, to maximize its
shelf life and to retain top quality.
Extra Virgin Olive Oil must be an entirely natural product. Nothing
may be added and the oil must be obtained without the use of heat
or chemicals. It must also pass laboratory tests for Free
Fatty Acids and Peroxide content. The oil should have a pleasant
bitterness and peppery taste.

A top grade Extra Virgin Olive Oil must have a vibrant olive fruitiness
in both aroma and taste, a balance and harmony with bitterness and
pungency, together with a lingering, pleasant taste.
To assess the true flavour, sample oil with a clean pallet. For
instance - eat apple or sip apple juice to refresh the taste buds
or smell coffee beans to refresh the senses.
